Let’s be honest here – During Quarantine, how many times did you turn to the internet to try one of those ‘viral food’ trends? If you’re me, probably more times than you’d like to admit…

Whether it was an escape from the mind-numbing boredom of quarantine, or a way to bring yourself comfort during a global pandemic, many of us turned to cooking to ease our collective woes. Here’s a look back at some of my favorite pandemic-era food treads, and how to make them.

Dalgona Coffee

Let’s start with one of my faves. Different versions of this sweet and chocolatey whipped coffee have existed for years in many countries including India, South Korea and Macau. But the version you’ll see on the internet appeared to gain popularity online after Korean actor “Jung Il-woo” ordered it at coffee shop during an episode of a local TV show. Its name comes from a toffee-like candy that was popular in Korea in the 1950’s – and is made by whisking together few simple ingredients.

Ingredients:

  • 2 tbsp instant coffee
  • 2 tbsp sugar
  • 2 tbsp hot water
  • Milk (as much as you prefer)

Directions:

  • Add your instant coffee, sugar, and hot water into a bowl
  • With a whisk, hand blender or immersion blender: whisk together ingredients until the mixture forms stiff peaks
  • Pour over cold milk, mix, and enjoy
